What temperature should a reach-in refrigerator hold?

The FDA Food Code calls for cold-held food at 41°F or below, so reach-in coolers are commonly set around 35–38°F. Reach-in freezers are commonly run at 0°F or below.

How do I check a door gasket?

Close the door on a strip of paper at several points around the door. If the paper slides out easily, the gasket is not sealing and should be adjusted or replaced.

Why clean the condenser coil?

A dirty condenser raises head pressure and amps, makes the unit run longer and shortens compressor life. Many kitchens need it cleaned every one to three months.
